Welcome to the “FOG 101” training module from the Western States Alliance. This training module is designed to help someone new to the business of Fats, Oil, and Grease (FOG). In this module, we’ll discuss what FOG is, the importance of managing FOG, the regulations that provide the authority for its management, grease removal devices: what they are, how they work, and how to size them, and best management practices for food service establishments (FSEs). At the end of the module, you should have an overall understanding of what FOG is and why we care.
